What does a typical engagement look like?

Most consultancies run between four and twelve weeks of active work, followed by a six-month retainer for post-opening support. We travel to you, embed with your team, and deliver a full direction document, menu, and operational system. Smaller engagements — audits, private events, mentorship — are scoped accordingly.

Do you work outside of South Africa and Dubai?

Yes, but selectively. Johannesburg, Cape Town and Dubai are where we're grounded and where we know the producers, teams, and market. We take on projects further afield when the brief is right and the travel is workable. Tell us what you're thinking — we'll let you know honestly if we're the right fit.

What's the mentorship programme?

A small, intentional programme for emerging chefs — usually one-to-one, sometimes in pairs — built around time on the pass with us, written feedback on your work, and structured goals over a three- or six-month arc. Intake is limited and we interview first.

Do you sell the knives and merch to the public?

Yes. The emporium is open to everyone — chefs, home cooks, gift-givers, and the dedicated few who want a Palm Fresh mug on the counter. Full launch is coming later in 2026. Join our correspondence list and we'll tell you first.

How much does it cost?

It depends entirely on scope. Small audits and private events start in the lower four figures; full concept-to-opening engagements sit in the mid-to-high five figures and occasionally beyond. We'll give you a clear, itemised proposal after our first conversation — no surprises, nothing retained unless you're ready.

Can we just meet for coffee first?

Always. Some of the best projects we've done started as a no-agenda coffee. If you're in Johannesburg, Cape Town or Dubai and want to talk before you send anything formal, say so in the form and we'll set it up.
