We work across six disciplines. Every engagement begins with two weeks inside your kitchen — tasting, listening, and reading the business — before we propose a single change.

The Method

Every engagement begins with the Palm Fresh Five-Point Review. We arrive, we read the kitchen, and we hand back a written diagnostic before we propose a single change. The Review is the first deliverable of every engagement — and the reason the engagements that follow are precise.

Procedures

Standard Operating Procedures.

What exists, what's written down, and what only lives in someone's head. The gap between the three is usually where the kitchen is losing money.

Compliance

Health & Safety.

Compliance is the floor, not the ceiling. We document where the kitchen meets the standard, where it doesn't, and what changes when the next inspection arrives.

Team

Staff & Structure.

Who reports to whom. Who actually decides. Where the brigade is trained, where it's improvising, and where the hierarchy on paper doesn't match the one on the line.

Menu

Menu Suitability.

Whether the menu fits the room, the market, and the kitchen that has to cook it. A menu that argues for itself on paper but can't be held through a Saturday service is the wrong menu.

Equipment

Equipment.

What's installed, what's working, what's been bought for show, and what's quietly losing the kitchen ten minutes per cover.

Every engagement is led personally — by the chef on the pass and the co-founder on the brief. We travel to you, embed with your team, and leave behind a kitchen that runs without us.
